The ingredients needed to make Malai kofta:
  1. Take For kofta
  2. Take 4 Boiled potatoes
  3. Prepare 100 Chesse/paneer
  4. Prepare 2 Chopped green chillies
  5. Get 1 tsp Red chilli powder
  6. Prepare 1 tsp Garam masala
  7. Prepare 1 tsp Chat masala
  8. Get to taste Salt
  9. Make ready 1 tsp Ginger garlic paste
  10. Get 1/2 tsp Chat masala
  11. Make ready 2 tsp Coriander leaves
  12. Take 5 tsp Plain flour/maida
  13. Make ready as needed Oil for frying kofta
  14. Take handful Chopped cashew
  15. Take FOR PUREE
  16. Take 2 tsp Oil
  17. Take 1 tsp Cumin seeds
  18. Make ready 1 inch Cinnamon stick
  19. Prepare 1 Bayleaf
  20. Take 2 Cloves
  21. Take 2 Green cardamom
  22. Make ready 5 Black pepper
  23. Make ready 2 Onion
  24. Take 3 Tomatoes
  25. Make ready to taste Salt
  26. Prepare 4 tsp Chopped cashew
  27. Prepare FOR GRAVY
  28. Prepare 1 tbspn Oil
  29. Get 1 tsp Butter
  30. Take 1 tsp Red chilli powder
  31. Get 1 tsp Ginger garlic paste
  32. Take 2 tsp Coriander powder
  33. Get 1/2 tsp Turmeric powder
  34. Make ready to taste Salt
  35. Get 1 tsp dried fenugreek leaves
  36. Prepare as needed Malai/cream
Instructions to make Malai kofta:
  1. Firstly take boil potato and mash them..
  2. Add grated cheese/paneer, green chilies,coriander leaves,salt,garam masala,chat masala,ginger garlic paste and red chilli powder.mix well
  3. Next add the plain flour and mix well.and knead into a smooth dough.
  4. Take a little portion of dough and take a little dry flour on hands to flatten it into a bowl shape.
  5. Then place 1-2 chopped cashews in seal from all sides into a ball or kofta.
  6. Roll into dry flour and keep aside.prepare all kofta in similar way.
  7. Keep all kofta in a plate aside and heat oil to shallow fry.
  8. Fry all kofta on medium flame by adding one by one.
  9. After a min or so start turning kofta so that it cooks evenly from all sides.once golden brown,take out on paper towel.keep kofta aside and prepare for puree.
  10. Heat oil in a pan add cumin seeds,cinnamon,bayleaf, cloves,green cardomom,black pepper then add onion, chopped tomatoes and cashews.
  11. Cover and cook until tomatoes soften.switch off the flame and let it cool.blend into a puree and strain puree.
  12. For gravy
  13. Heat of oill with little butter add ginger garlic paste, red chilli powder mix and immediately add in the blended puree add coriander powder,turmeric powder,salt mix well.cover and cook until oil separates. open lid and mix
  14. Add garam masala, dried fenugreek leaves and mix well.
  15. Now add malai and mix it.cover and cook for 2-3 min until oil separates.
  16. Open lid and chopped coriander leaves and mix well.
  17. Gravy is ready to serve.
  18. Place kofta in a serving plate& pour hot gravy covering
